Here's an epee fencer I need to watch more of... Japan's Minobe Kazuyasu. I'm better when I'm patient in epee, and I can be good at the hand touches when I'm patient. Minobe is good at baiting for the hand touch, and using that to sucker people into hesitating in distance for a surprise attack.
